About the Hero of Time’s last name
The Kokiri don’t have last names. Their society is small enough and new members emerge infrequently enough that it simply isn’t necessary.
As such, when Link married Malon and had no last name, he took her last name instead, becoming Link Lon.
To clarify: I Headcanon Malon and Talon’s last names as Lon, not Lon Lon. The fact that their first names already end in Lon means the the ranch name still works even without having it twice in their last name (which always sounded clumsy to me), and I like to imagine their family has a tradition of giving all their children first names that end in Lon (which yes, does mean Link and Malon’s children would get names ending in Lon to keep up the naming scheme).
