Ingredients: 300g rigatoni pasta. 2 tablespoons olive oil. 4 spring onions, thinly sliced. 2 medium zucchinis, diced. 2 cloves garlic, minced. 1 cup heavy cream. 1 cup grated Pecorino cheese. Salt and black pepper to taste. Fresh parsley, chopped for garnish.
Instructions: Cook rigatoni according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water. In a large skillet, heat olive oil over medium heat. Add sliced spring onions and diced zucchinis. Cook until softened, about 5 minutes. Add minced garlic to the skillet and cook for another minute until fragrant. Pour in heavy cream and bring to a simmer. Stir in grated Pecorino cheese until melted and smooth. Season with salt and black pepper to taste. Add cooked rigatoni to the skillet along with the reserved pasta water. Stir to combine and simmer for 2-3 minutes until the sauce thickens slightly and coats the pasta. Garnish with chopped fresh parsley before serving. Enjoy hot!
