Have you ever made a recipe, but it was eaten too quickly to photograph the final result?!? That happens every time I make this roasted chicken and potatoes! . Itβs delicious, super quick, and even my 8 year old can make it with minimal help. . Ingredients -2lbs mini golden potatoes -1 large onion, chopped in 1 inch pieces -4 tablespoons olive oil -1 pouch of dry onion soup mix -2 8 piece cut up chickens - Weber Beer Can Chicken spice Wash and cut potatoes in half. Put them in 2 9x13 pans. Drizzle on olive oil and sprinkle with onion soup mix. Mix well. Add 8 piece cut up chicken on top of potatoes. Drizzle with olive oil and generously sprinkle on Beer Can Chicken spice. Cover with foil and bake on convention roast 400β’ for 30minutes. Uncover and continue roasting until chicken temperature reaches 165 and juice runs clear.
