One of my goals for this year is to eat more healthily while also finding recipes that are quick and easy. With that in mind, this Peanut Butter and Jelly Oatmeal from Gemma @biggerbolderbaking was a great way to start my morning! It comes from Gemma's "Microwave in a Mug" series. It takes only minutes to cook, can be prepared the night before and stored in the fridge, and it tastes divine. The familiar combination of peanut butter and jelly is wonderful enough, but warm them up and add the nutty taste of oats to them and we have a winner. It's like indulging in a sweet treat--a sweet treat that's good for you! Thanks, Gemma! Peanut Butter and Jelly Oatmeal 3 T. rolled oats 6 T. water 2 T. milk 2 t. smooth peanut butter 2 t. strawberry jelly Place all the ingredients except the jelly in a microwave-safe mug or bowl. Cook for three minutes, stopping to stir each minute. Once done, add an extra splash of milk if the oatmeal seems too thick.
