Ingredients: 1 cup quinoa, rinsed and drained. 2 cups water. 1 cup diced pineapple. 1 cup diced mango. 1/2 cup diced red bell pepper. 1/2 cup diced red onion. 1/4 cup chopped fresh cilantro. 1/4 cup shredded unsweetened coconut. 1/4 cup chopped macadamia nuts. For the dressing:. 1/4 cup coconut milk. 2 tablespoons fresh lime juice. 2 tablespoons extra-virgin olive oil. 1 tablespoon honey optional for sweetness. Salt and pepper to taste.
Instructions: Rinse the quinoa and add water to a medium saucepan.
