Indulge in the tropical flavors of coconut and lime with this delightful Coconut Lime Poke Cake Parfait. Moist cake cubes soaked in lime-infused condensed milk, layered with fluffy whipped cream, create a refreshing and satisfying dessert.
Ingredients: 1 box white cake mix. 1 cup coconut milk. 1/2 cup vegetable oil. 3 large eggs. 1/4 cup lime juice. 1 tablespoon lime zest. 1 cup sweetened shredded coconut. 1 can 14 ounces sweetened condensed milk. 2 cups whipped cream. Additional lime zest and shredded coconut for garnish.
Instructions: Preheat the oven to 350F 175C and grease a 9x13-inch baking pan. In a large bowl, combine the white cake mix, coconut milk, vegetable oil, eggs, lime juice, and lime zest. Mix until well combined. Fold in the sweetened shredded coconut and pour the batter into the prepared baking pan. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. While the cake is baking, in a small bowl, mix together the sweetened condensed milk and additional lime zest. Once the cake is out of the oven, use the handle of a wooden spoon to poke holes all over the cake. Pour the sweetened condensed milk mixture over the warm cake, allowing it to seep into the holes. Allow the cake to cool completely, then refrigerate for at least 1 hour. Cut the chilled cake into small cubes. In serving glasses or bowls, layer the cake cubes with whipped cream. Repeat the layers, finishing with a dollop of whipped cream on top. Garnish with additional lime zest and shredded coconut. Serve chilled and enjoy!
