Did you know, that in order to sell jam (even on a small handmade scale) there are a variety of laws and labeling requirements which need to be met?! JP's Delights was recently asked to make a bespoke batch of Orange Marmalade for a customer; something which we were happy to create. Before the work in the kitchen, it was down to business with the calculator, recipe figures, and refractometer (a device that measures the level of sugar). It's not the fun or delicious side of JP's Delights, but just as important!
