Piftija as it’s known in Macedonian is basically a jelly meat. It’s one of those things that I love. I use either a pigs head(which are hard to find) or a unsmoked pork hock. My mum makes it with chopped up garlic but I’ve put my own spin on it. One of my favourite childhood memories was my mum making us piftia (pork meat in jelly) we each would sit down and Mum would give us a bowl each. Every now and then I make it too. I've always been able to enjoy my own company, we don't 'begfren', chase people or try to avoid the 'awkward pauses' in a conversion.
