Weâve all seen the baked feta pasta all over social media and even the news! Â The famous pasta recipe that Finland run out of feta. Â Being a foodie I instantly wanted to join in but, as you know, the main ingredient is a huge block of feta. Â Was I going to let this stop me? Â Initially, yes. Â Then I realized I had a large block of tofu sitting in my fridge that I didnât know what I was going to do with. Â So I started experimenting.
Itâs no secret that vegans use tofu to substitute feta in salads and such. Â I figured I could blend some tofu together with some seasoning and create a vegan feta paste, shove it into the oven, and bake it with the tomatoes.
The entire 45 minutes it was in the oven my family members kept coming out of their rooms to ask what smelled so good and when they could eat it. Â âSoon! Â Be patient!â I said, as if I knew this was going to be good. Â I didnât. Â It was a complete experiment and I was nervous as hell to see how it would turn out.
Once it was done baking I pulled it out and started swirling it around.  It looked gritty and I was quickly losing confidence but I went on.  I mixed it with my cooked pasta, spinach, and basil hoping everything would work out.  I tried a bite and, holy crap, it was smooth and delicious.  It was so creamy and so rich.  It definitely didnât turn out gritty like I had thought. I could not believe I was eating tofu.  I immediately had my sister come downstairs and had her take a bite to make sure I wasnât hallucinating and she loved it!
Back story, my sister hates tofu. Â Well, she thinks she hates tofu. Â Sheâs only had it once in a soup and she decided it wasnât for her. Â Sheâs always skeptical about tofu dishes but even she couldnât resist this dish. Â She had two servings of pasta even though she wasnât hungry. Â I take that as a very positive response.
Everyone in my family loved this dish and they canât wait for me to make it again. Â I highly recommend this dish to anyone and everyone, vegan or not. Â It is absolutely amazing and so healthy. Â Packed with protein and fresh vegetables. Â I cannot stop raving about this dish. Â Even if youâre not vegan, try this out with tofu. Â Maybe youâll find a new way to incorporate tofu into your life after it.
