Ingredients: 2 cups heavy cream. 1 cup whole milk. 3/4 cup granulated sugar. 1/4 teaspoon ground cardamom. Pinch of saffron threads. 4 large egg yolks.
Instructions: In a saucepan, combine heavy cream, whole milk, sugar, ground cardamom, and saffron threads. Heat over medium heat until the mixture begins to simmer. Meanwhile, in a separate bowl, whisk the egg yolks until smooth. Once the cream mixture is simmering, slowly pour a ladleful of it into the bowl with the egg yolks, whisking constantly to temper the eggs. Pour the tempered egg mixture back into the saucepan with the remaining cream mixture, whisking constantly. Continue cooking over medium heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon, about 5-7 minutes. Do not let it boil. Remove from heat and strain the mixture through a fine-mesh sieve into a clean bowl. Cover the bowl with plastic wrap, pressing it directly onto the surface of the mixture to prevent a skin from forming. Chill in the refrigerator for at least 4 hours or until completely chilled. Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions until it reaches the consistency of soft-serve ice cream. Transfer the churned ice cream to a freezer-safe container, cover, and freeze for at least 4 hours or until firm. Serve the cardamom and saffron ice cream in tartlette shells for a delightful dessert.
