A colorful and tasty vegan sandwich with tofu salad spiced with turmeric. Great for a light lunch or a picnic. It's a filling and healthy meal choice because it's full of protein and fresh vegetables.
Ingredients: 1 block extra-firm tofu, pressed and cubed. 2 tablespoons olive oil. 1 tablespoon turmeric powder. Salt and pepper to taste. 1/4 cup vegan mayonnaise. 1 tablespoon Dijon mustard. 1 tablespoon lemon juice. 1/4 cup diced red onion. 1/4 cup diced celery. 1/4 cup chopped fresh parsley. 8 slices gluten-free bread. Lettuce leaves, for serving. Tomato slices, for serving. Cucumber slices, for serving.
Instructions: Preheat the oven to 375F 190C. In a bowl, toss the cubed tofu with olive oil, turmeric powder, salt, and pepper until evenly coated. Spread the tofu cubes on a baking sheet lined with parchment paper and bake for 25-30 minutes, or until golden brown and slightly crispy, flipping halfway through. In another bowl, mix together vegan mayonnaise, Dijon mustard, lemon juice, red onion, celery, and parsley to make the salad dressing. Once the tofu is cooked, let it cool slightly, then add it to the salad dressing mixture and toss to combine. Toast the gluten-free bread slices if desired. Divide the turmeric tofu salad evenly among 4 slices of bread. Top each sandwich with lettuce leaves, tomato slices, cucumber slices, and remaining bread slices. Slice the sandwiches in half diagonally and serve.
