This delicious parfait is based on the classic tiramisu trifle and has layers of rich red velvet cake, mascarpone cream with raspberry flavor, and fresh berries.
Ingredients: 1 package red velvet cake mix. 1 cup fresh raspberries. 8 oz mascarpone cheese. 1 cup heavy cream. 1/2 cup granulated sugar. 1 teaspoon vanilla extract. 1/4 cup brewed espresso, cooled. 2 tablespoons raspberry liqueur. 1/2 cup dark chocolate shavings.
Instructions: Follow the directions on the box to make the red velvet cake. After it has cooled, break it up into little pieces. Mascarpone cheese, sugar, and vanilla extract should all be mixed together in a bowl. Mix the ingredients together until they are smooth and creamy. Whip the heavy cream in a different bowl until stiff peaks form. Add the whipped cream to the mascarpone mixture slowly while folding it in. Put brewed espresso and raspberry liqueur in a small bowl and mix them together. Put the red velvet cake crumbles in the bottom of serving glasses or trifle bowls and layer them on top of each other. Put a layer of the mascarpone cream mixture on top of the cake, and then put a layer of fresh raspberries on top of that. Add more layers until the glasses or bowls are full. Add a dollop of mascarpone cream on top to finish. The parfaits should be put in the fridge for at least two hours so that the flavors can mix. Add more fresh raspberries and dark chocolate shavings to the top of each parfait before serving. Have fun with your tasty Red Velvet-Raspberry Tiramisu Trifle Parfait!
