Fresh Strawberry Mango Popsicles-Easy Summer Treat
This summer parfait doesn't need to be baked, so you can enjoy the bright and juicy flavors of fresh berries. On hot days, this treat is great because it has sweet berries, creamy Greek yogurt, and crunchy granola.
Ingredients: 1 cup fresh strawberries, hulled and sliced. 1 cup fresh blueberries. 1 cup fresh raspberries. 1/4 cup honey. 2 cups Greek yogurt. 1 cup granola. 1/4 cup mint leaves, for garnish.
Instructions: You can put fresh strawberries, blueberries, raspberries, and honey in a bowl and mix them together. Let it sit for 15 minutes to blend. Put the Greek yogurt, mashed berries, and granola in serving glasses or bowls. Add more layers until the glasses are full. Add a layer of berries and a drizzle of honey to the top to finish. Add fresh mint leaves to the top of each parfait. Put it in the fridge for at least an hour before serving so the flavors can mix. Cool it down and enjoy the cool taste of summer!

A quick and refreshing frozen slushie recipe perfect for hot days or anytime you need a cool treat. Customize with your favorite fruit juice and adjust sweetness to taste.
Ingredients: 4 cups ice cubes. 1 cup fruit juice e.g., orange, pineapple, or strawberry. 2 tablespoons sugar optional. 1 tablespoon lemon or lime juice optional.
Instructions: Put ice cubes, fruit juice, sugar if using, and lemon or lime juice if using in a blender. Mix until it's smooth and slushy. Pour into glasses and serve right away.

Mint-Lemon Slushy/Shaved Ice
Temperature is slowly rising in Bay Area and we are craving for our Sunday afternoon Farmer's market Shaved Ice rituals. There is nothing new to making lemonade, but this Mint-Lemon Slushy is a super easy and absolute favorite in our household. This has become a temporary substitute for our Farmer's Market Shaved Ice. As per my kids' special request, adding Mint-Lemon Slushy/Shaved Ice into the blog :) We have a number of citrus plants in our backyard starting from Kaffir Lime, Eureka Lemons, Meyer Lemons, Lisbon, and so forth. Each of these is slightly different from each other and best for different dishes. For lemonade though you can use any. Depending on the type of lemon chosen the amount of sugar will vary as some of them are less acidic than others. For example, Meyer lemons are less acidic, thin-skinned, and have a yellow-orange hue which will need slightly less sugar than Eureka Lemons. Mint-Lemon Shaved Ice
Mint-Lemon Slushie I have used both Eureka and Meyer lemons to make this slushy. You do not have to take out the seeds or worry too much about the skin. In fact, if possible peel like orange and add them, in case it is Meyer some skin won't hurt only add flavor to it. This Slushy has now become a must complimentary drink with our lunch. Depending on the mood, I run the mixer high or low to make it slushy or shaved ice, basically smooth grind versus coarse. It takes a few minutes and comes out perfectly every time.
