In this recipe for Cherry Glazed BBQ Chicken, grilled chicken is mixed with a sweet and sour cherry glaze. This dish is great for summer barbecues or dinners during the week, and your family and friends will love how good it tastes.
Ingredients: 4 chicken breasts. 1 cup fresh cherries, pitted and halved. 1/4 cup ketchup. 2 tablespoons honey. 2 tablespoons soy sauce. 1 tablespoon apple cider vinegar. 1 clove garlic, minced. Salt and pepper to taste.
Instructions: Warm up the grill over medium-high heat. Add salt and pepper to the chicken breasts. Put the chopped garlic, cherries, ketchup, honey, soy sauce, and apple cider vinegar in a small saucepan. Over medium-low heat, bring the mixture to a simmer. Stir it every now and then for about 10 minutes, or until the cherries break down and the sauce gets thicker. Almost done means that the chicken breasts have been cooked through. Grill them for about 6 to 7 minutes on each side. During the last few minutes of grilling, brush the cherry glaze on both sides of the chicken breasts. This will let the glaze caramelize. After taking the chicken off the grill, let it rest for a few minutes. Serve hot with any cherry glaze that's left over drizzled on top.
