These gluten-free oat pancakes are a tasty and healthy way to start the day. A tasty cherry compote is spread on top of them after they are made with a mix of oat and almond flours. Ingredients: 1 cup gluten-free oats. 1/2 cup almond flour. 2 tablespoons honey or maple syrup. 1 teaspoon baking powder. 1/2 teaspoon cinnamon. 1/4 teaspoon salt. 2 large eggs. 1 cup almond milk or any dairy-free milk. 1 teaspoon vanilla extract. 1 cup fresh or frozen cherries. 2 tablespoons water. 2 tablespoons honey or maple syrup for the compote. 1/2 teaspoon lemon zest optional. Cooking spray or oil for the pan.
Instructions: Put the gluten-free oats in a blender or food processor and blend or process them until they become fine flour. Put the baking powder, cinnamon, salt, oat flour, and almond flour in a bowl and mix them together. Add the eggs, honey or maple syrup, almond milk, and vanilla extract to a different bowl and mix them together using a whisk. Add the wet ingredients to the dry ones and mix them together until everything is well mixed. For the batter to get thicker, let it sit for 5 to 10 minutes. Make the cherry compote while the batter sits. The cherries, water, honey or maple syrup, and lemon zest if using should all be put in a saucepan. Over medium-low heat, bring the mixture to a simmer. Cook for 5 to 7 minutes, or until the cherries soften and the sauce gets a little thicker. Take it off the heat and set it aside. Warm up a nonstick griddle or skillet over medium heat and use cooking spray or oil to lightly coat it. For every pancake, put 1/4 cup of pancake batter on a hot skillet. After about two to three minutes, the top should start to bubble and the edges should look set. The pancakes should be cooked for another two to three minutes, or until they are golden brown and done all the way through.
