Ingredients: 2 cups all-purpose flour. 1/4 cup granulated sugar. 1 tablespoon baking powder. 1/2 teaspoon salt. 1 cup almond milk. 1/4 cup vegetable oil. 1 tablespoon apple cider vinegar. 1 teaspoon vanilla extract. 1/4 cup vegan butter, softened. 1/2 cup brown sugar. 1 tablespoon ground cinnamon. 1/4 cup powdered sugar for glaze. 1-2 tablespoons almond milk for glaze. 1/2 teaspoon vanilla extract for glaze.
Instructions: Warm the oven up to 175F 350C. Prepare a round cake pan by greasing it. Mix the flour, sugar, baking powder, and salt together in a large bowl. With a whisk, mix almond milk, vegetable oil, apple cider vinegar, and vanilla extract in a different bowl. Mix the dry and wet ingredients together until they are just barely mixed. Melt some vegan butter and mix it with brown sugar and cinnamon in a small bowl. This will make the cinnamon swirl. Once the pan is ready, spread half of the cake batter into it. Put half of the cinnamon swirl mix on top of the batter. Add more layers with the rest of the batter and cinnamon swirl mixture. Mix the cinnamon mixture into the batter slowly with a knife. Put it in the oven and bake for 25 to 30 minutes, or until a toothpick stuck in the middle comes out clean. For the glaze, mix powdered sugar, almond milk, and vanilla extract in a bowl until smooth while the cake bakes. It's time to take the cake out of the oven and let it cool for a while. Spread the glaze on top of the hot cake. Cut and serve. Have fun!
