Enjoy this tasty vegan strawberry layer cake, which is packed with juicy strawberries and topped with a smooth frosting. It's great for any event, from birthdays to big get-togethers.
Ingredients: 3 cups all-purpose flour. 2 cups granulated sugar. 2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1 cup almond milk. 3/4 cup vegetable oil. 2 tbsp apple cider vinegar. 1 tbsp vanilla extract. 2 cups fresh strawberries, sliced. 1/4 cup strawberry jam. 1 cup vegan butter, softened. 4 cups powdered sugar. 1 tsp vanilla extract. 2-3 tbsp almond milk. Vegan whipped cream optional. Fresh strawberries for decoration optional.
Instructions: Warm the oven up to 175F 350C. Prepare three 9-inch round cake pans by greasing and flouring them. Mix the flour, sugar, baking powder, baking soda, and salt in a large bowl with a whisk. Put the almond milk, vegetable oil, apple cider vinegar, and vanilla extract in a different bowl and mix them together. Stir the wet and dry ingredients together until they are just combined. Be careful not to mix too much. Spread the batter out evenly in the cake pans that have been prepared. Use a spatula to make the tops smooth. Put it in the oven and bake for 25 to 30 minutes, or until a toothpick stuck in the middle comes out clean. Let the cakes cool for 10 minutes in the pans, then move them to wire racks to cool all the way through. Get the frosting ready while the cakes cool. Mix vegan butter in a big bowl until it's smooth. Slowly add the powdered sugar and beat the mixture until it is smooth and creamy. Put vanilla extract in the mix. One tablespoon at a time, add the almond milk until the texture you want is reached. After the cakes are completely cool, put one layer on a plate to serve. Add a thin layer of strawberry jam on top. Put strawberry slices on top of the jam. Do it again with the second stack. Add the last layer on top. Cover the cake's top and sides with the frosting that you just made. If you want, you can decorate it with vegan whipped cream and fresh strawberries. Until you're ready to serve, put the cake in the fridge. Have fun!
