Ingredients: 2 cups shredded cooked chicken. 1 can 15 ounces black beans, drained and rinsed. 1 cup canned pumpkin puree. 1/2 cup sour cream. 1/4 cup chopped fresh cilantro. 2 tablespoons chopped green chilies. 1 teaspoon ground cumin. 1/2 teaspoon chili powder. 1/2 teaspoon garlic powder. Salt and pepper to taste. 8 flour tortillas. 1 cup shredded Monterey Jack cheese. 1 cup shredded cheddar cheese. 1/4 cup chopped green onions. 1/4 cup sliced black olives. Cooking spray.
Instructions: Preheat oven to 350F 175C. In a large bowl, mix together shredded chicken, black beans, pumpkin puree, sour cream, cilantro, green chilies, cumin, chili powder, garlic powder, salt, and pepper. Divide the chicken mixture evenly among the flour tortillas. Sprinkle Monterey Jack cheese and cheddar cheese over each tortilla, then roll up tightly. Place the rolled enchiladas seam-side down in a greased baking dish. In a separate bowl, mix together green onions and black olives. Sprinkle over the top of the enchiladas. Bake in preheated oven for 25-30 minutes, or until the enchiladas are heated through and the cheese is melted and bubbly. Serve hot, garnished with additional chopped cilantro and a dollop of sour cream if desired.
