Enjoy the flavors of Peruvian cuisine with this delicious grilled chicken marinated in a flavorful blend of spices, served with a vibrant and zesty Aji Verde sauce.
Ingredients: 1 whole chicken, cut into parts. 1/4 cup soy sauce. 1/4 cup white vinegar. 4 cloves garlic, minced. 2 tablespoons paprika. 1 tablespoon cumin. 1 tablespoon dried oregano. Salt and pepper to taste. For Aji Verde:. 2 jalapeno peppers, seeded. 1 cup fresh cilantro leaves. 1/4 cup mayonnaise. 2 cloves garlic. Juice of 2 limes. Salt to taste.
Instructions: Salt, pepper, paprika, cumin, dried oregano, and soy sauce should all be mixed together in a bowl. Make sure the chicken pieces are fully covered when you add them to the marinade. Let it sit for at least an hour, or better yet, overnight. Warm the grill up to a medium-high level. In general, chicken needs about 6 to 8 minutes on each side on the grill until it's fully cooked. Put jalapenos, cilantro, mayonnaise, garlic, lime juice, and salt in a blender and blend until smooth. This is the Aji Verde sauce. Put Aji Verde sauce on the side of the grilled chicken.
