This One Pot Chicken and Rice is a hearty and flavorful meal that is perfect for busy weeknights. With tender chicken thighs, fragrant rice, and vegetables all cooked together in one pot, it's a convenient dish that the whole family will love.
Ingredients: 1 lb chicken thighs, bone-in, skin-on. 1 cup long grain white rice. 1 onion, chopped. 2 cloves garlic, minced. 1 bell pepper, diced. 1 can 14.5 oz diced tomatoes. 2 cups chicken broth. 1 teaspoon paprika. 1/2 teaspoon dried thyme. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Warm up the olive oil in a big pot over medium-high heat. Add salt, pepper, and paprika to the chicken thighs to taste. Put the chicken thighs in the pot with the skin side down. Cook for about 5 minutes on each side until they are browned. Take it out of the pot and set it aside. Put the bell pepper, onion, and garlic in the same pot. About 34 minutes of cooking will soften the food. Put the rice in the pot and stir it around a lot for one to two minutes. Chicken broth, dried thyme, salt, and pepper should all be added now. Place the skin-side up chicken thighs back into the pot after they've been browned. Once the mixture starts to boil, lower the heat, cover, and let it cook for 20 to 25 minutes, or until the chicken is soft and the rice is cooked. Give it a five-minute rest after taking it off the heat before serving. If you want, add fresh herbs as a garnish.
