This roast chicken with caramelized vegetables is a hearty and tasty meal that's great for a family dinner or a special event. The chicken is juicy and tender, and the skin is nice and crispy. The vegetables are both sweet and savory, and the caramelization is just right.
Ingredients: 1 whole chicken about 3-4 pounds. 2 tablespoons olive oil. Salt and pepper to taste. 1 onion, sliced. 2 carrots, peeled and chopped. 2 parsnips, peeled and chopped. 2 sweet potatoes, peeled and chopped. 2 tablespoons balsamic vinegar. 2 tablespoons honey. 2 sprigs of rosemary.
Instructions: Preheat your oven to 375F 190C. Rub the whole chicken with olive oil, salt, and pepper. In a roasting pan, place the sliced onion, chopped carrots, parsnips, and sweet potatoes. Drizzle the vegetables with olive oil, balsamic vinegar, and honey. Toss to coat. Place the seasoned whole chicken on top of the vegetables in the roasting pan. Add the rosemary sprigs to the pan for flavor. Roast in the preheated oven for about 1 hour and 15 minutes, or until the chicken is golden brown and cooked through internal temperature reaches 165F or 75C. Halfway through cooking, baste the chicken with the juices from the pan and stir the vegetables for even caramelization. Once done, remove from the oven and let the chicken rest for 10 minutes before carving. Serve the roast chicken with caramelized vegetables hot, garnished with fresh herbs if desired.
