An excellent roast chicken recipe that is Paleo-friendly and has flavors of onions and rosemary. Ideal for a filling and substantial dinner.
Ingredients: 1 whole chicken about 4-5 pounds. 2 onions, thinly sliced. 4-5 sprigs of fresh rosemary. 2 cloves of garlic, minced. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Set the oven temperature to 375F 190C. After giving the chicken a thorough rinse, pat it dry with paper towels. On the inside as well as the outside, liberally season the chicken with salt and pepper. To make a bed for the chicken, put the sliced onions in the bottom of a roasting pan. Place fresh rosemary sprigs and minced garlic inside the chicken cavity. To evenly coat the outside of the chicken, rub it with olive oil. Top the bed of onions in the roasting pan with the spiced chicken. For approximately one hour and thirty minutes, or until the internal temperature reaches 165F 74C, roast the chicken in the preheated oven. To keep the chicken flavorful and moist, baste it with its own juices every thirty minutes. Take the chicken out of the oven when it's golden brown and cooked through. Before slicing and serving, allow the chicken to rest for ten to fifteen minutes. As a tasty side dish, serve the caramelized onions with the Roast Chicken with Rosemary and Onion.
