Ingredients: 2 medium zucchinis, thinly shaved. 1/2 cup sliced almonds. 1/4 cup grated Parmesan cheese. 2 tablespoons olive oil. 1 tablespoon lemon juice. 1 teaspoon honey. 1/2 teaspoon red pepper flakes. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: In a dry skillet over medium heat, toast the sliced almonds until they turn golden brown. Set aside to cool. In a small bowl, whisk together the olive oil, lemon juice, honey, red pepper flakes, salt, and pepper to make the dressing. In a large bowl, combine the shaved zucchinis and toasted almonds.
