These Fruity Butterfly Pancakes are a fun and creative way to start the day, plus they taste great. They look like pretty butterflies when you add the colorful fruits and whipped cream. These are great for both kids and adults.
Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup buttermilk. 1 egg. 2 tablespoons melted butter. 1/2 teaspoon vanilla extract. Assorted fresh fruits e.g., strawberries, blueberries, banana slices. Whipped cream. Chocolate chips for decoration.
Instructions: In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are okay. Preheat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or butter. For each butterfly pancake, pour a small amount of batter onto the skillet in the shape of a butterfly's wings. Use a spoon to create the desired shape. Place a few fruit slices on top of each wing to create colorful patterns. Cook until bubbles form on the surface of the pancakes and the edges look set, then flip them carefully with a spatula. Continue to cook until the pancakes are golden brown on both sides. Remove the pancakes from the skillet and let them cool slightly. To assemble, place two pancakes next to each other to form butterfly wings. Add a dollop of whipped cream in the center to create the body of the butterfly. Decorate with additional fruit slices and chocolate chips for the eyes and mouth. Serve your fruity butterfly pancakes warm and enjoy!
