This easy and tasty one-pot pasta recipe makes it possible to enjoy a hearty meal with little cleanup. It's great for busy weeknights because it only needs a few simple ingredients and doesn't take long to cook.
Ingredients: 1 lb spaghetti. 4 cups vegetable broth. 1 can 14.5 oz diced tomatoes. 1 onion, thinly sliced. 4 cloves garlic, minced. 1 teaspoon dried basil. 1 teaspoon dried oregano. 1/2 teaspoon red pepper flakes. Salt and pepper to taste. 1 cup fresh spinach leaves. 1/4 cup grated Parmesan cheese optional. Fresh basil leaves for garnish optional.
Instructions: In a large pot, combine spaghetti, vegetable broth, diced tomatoes, onion, garlic, dried basil, dried oregano, red pepper flakes, salt, and pepper. Bring to a boil over high heat, then reduce heat to medium-low and simmer uncovered for about 10-12 minutes, or until pasta is cooked and most of the liquid is absorbed, stirring occasionally. Stir in fresh spinach leaves and cook for an additional 1-2 minutes until wilted. Remove from heat and sprinkle with grated Parmesan cheese if desired. Serve hot, garnished with fresh basil leaves if desired.
