This cauliflower mash is a creamy and delicious low-carb alternative to mashed potatoes. It's easy to make and pairs well with a variety of main dishes.
Ingredients: 1 head cauliflower, cut into florets. 2 cloves garlic, minced. 2 tablespoons butter. 1/4 cup heavy cream. Salt and pepper to taste. Chopped fresh parsley for garnish optional.
Instructions: As the water boils, add salt to a large pot. When the water starts to boil, add the cauliflower florets and cook for 8 to 10 minutes, until they are soft. Take the cauliflower out of the water and put it in a food processor. Slice the garlic and put it in the food processor with the cauliflower. Then add the butter and heavy cream. Scrape down the sides of the bowl as needed to make the mixture smooth and creamy. For a tasty mash, add salt and pepper to taste.
