Ingredients: 2 ripe bananas, mashed. 1 cup creamy peanut butter. 1/4 cup honey or maple syrup. 2 cups gluten-free rolled oats. 1/2 teaspoon cinnamon. 1/4 teaspoon salt. 1/2 cup chocolate chips optional.
Instructions: Preheat the oven to 350F 175C. Grease an 8x8 inch baking dish or line it with parchment paper. In a large mixing bowl, combine mashed bananas, peanut butter, and honey or maple syrup until smooth. Add oats, cinnamon, and salt to the mixture, and stir until well combined. If desired, fold in chocolate chips. Press the mixture evenly into the prepared baking dish. Bake for 20-25 minutes, or until the edges are golden brown. Allow the bars to cool completely in the pan before slicing into squares.
