Ingredients: 4 salmon fillets. 1 cup spinach, chopped. 1/4 cup sun-dried tomatoes, chopped. 1/4 cup cream cheese. 2 cloves garlic, minced. 1 tablespoon olive oil. Salt and pepper to taste.
Instructions: Warm the oven up to 190C 375F. Put olive oil in a pan and heat it over medium-low heat. Add chopped spinach and sun-dried tomatoes after sauting garlic until it smells good. Let the spinach wilt while you cook. Take the pan off the heat and mix in the cream cheese until everything is well mixed. Add pepper and salt to taste. Each salmon fillet should have a pocket cut into it. Be careful not to cut all the way through the bottom. Fill up each pocket with the creamy spinach mix. Fillets of stuffed salmon should be put on a baking sheet that has been lined with parchment paper. Once the oven is hot, bake the salmon for 15 to 20 minutes, or until it's fully cooked and flaky when you use a fork. If you want, you can serve it hot and top it with fresh herbs.

Ingredients: 4 boneless, skinless chicken breasts. 2 cups chicken broth. 1 cup heavy cream. 1 cup grated Parmesan cheese. 1/2 cup sun-dried tomatoes, chopped. 1/4 cup diced onion. 3 cloves garlic, minced. 1 teaspoon dried basil. 1 teaspoon dried oregano. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 12 oz fettuccine noodles, uncooked.
Instructions: Chicken broth, heavy cream, Parmesan cheese, sun-dried tomatoes, onion, garlic, basil, oregano, salt, and pepper should all be put into a slow cooker. Cover the chicken breasts with sauce when you put them in the slow cooker. Keep the lid on and set the heat to low for four to five hours, or until the chicken is fully cooked and soft. Take the chicken out of the slow cooker and use two forks to shred it. In the meantime, cook the fettuccine noodles according to the directions on the package. Add the shredded chicken back to the slow cooker and stir it in with the sauce. Put the cooked fettuccine noodles on top of the chicken Alfredo. If you want, you can add more Parmesan cheese and fresh basil as a garnish.

Ingredients: 1/2 cup sun-dried tomatoes. 1 cup cashews, soaked. 1/4 cup fresh basil leaves. 2 cloves garlic. 2 tablespoons nutritional yeast. 1 tablespoon lemon juice. Salt and pepper to taste. 8 slices of whole grain bread. 2 cups mixed leafy greens such as arugula, spinach, kale. 1 tomato, sliced. 1/2 red onion, thinly sliced. 1 avocado, sliced.
Instructions: Soak cashews, add basil leaves, garlic, nutritional yeast, lemon juice, salt, and pepper. Put all of these ingredients in a food processor and blend them until the cashew-basil ricotta is smooth. Toast the whole grain bread until it turns golden brown. Cover four pieces of toasted bread with a thick layer of the cashew-basil ricotta. Put mixed leafy greens, sliced tomato, red onion, and avocado slices on top of each slice that has ricotta on it. To make sandwiches, add the last four toasted bread slices on top. Cut the sandwiches in half across the middle and serve.

Ingredients: 1 cup quinoa. 2 cups water. 1/2 cup sun-dried tomatoes, chopped. 1/2 cup crumbled feta cheese. 2 tablespoons olive oil. 1 tablespoon balsamic vinegar. 1 clove garlic, minced. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: Run cold water over the quinoa several times to clean it. Put the quinoa and water in a medium-sized saucepan. After it starts to boil, turn down the heat, cover, and let it cook for 15 minutes, or until the quinoa is done and the water is absorbed. To cool, put the cooked quinoa in a large bowl and use a fork to fluff it up. Cut up sun-dried tomatoes, crumble feta cheese, olive oil, balsamic vinegar, garlic, salt, and pepper, and mix them all into the quinoa. Carefully toss to mix. Before you serve, let the flavors mix for at least 15 minutes. Before serving, sprinkle with fresh basil leaves. Serve and have fun!
