Grilled shrimp scampi skewers that taste great and have just the right amount of garlic, lemon, and spices. This is a quick and tasty BBQ recipe that is great for summer get-togethers.
Ingredients: 1 lb large shrimp, peeled and deveined. 2 tablespoons olive oil. 3 cloves garlic, minced. 1/4 cup fresh parsley, chopped. 1 teaspoon red pepper flakes. Salt and pepper to taste. 1 lemon, sliced. Wooden skewers, soaked in water.
Instructions: Preheat the grill to medium-high heat. In a bowl, combine olive oil, minced garlic, chopped parsley, red pepper flakes, salt, and pepper. Add the peeled and deveined shrimp to the bowl, coating them evenly with the mixture. Thread the marinated shrimp onto the soaked wooden skewers, alternating with slices of lemon. Place the skewers on the preheated grill and cook for 2-3 minutes per side or until the shrimp are opaque and lightly charred. Remove from the grill and serve immediately. Garnish with additional chopped parsley and lemon wedges if desired.
