Experience a burst of tropical flavors with these Coconut Lime Grilled Shrimp. The marinade infuses the shrimp with a delightful combination of coconut, lime, and a hint of spice, creating a perfect dish for your barbecue gatherings.
Ingredients: 1 lb large shrimp, peeled and deveined. 1/2 cup coconut milk. 3 tablespoons lime juice. 2 tablespoons soy sauce. 2 tablespoons honey. 2 cloves garlic, minced. 1 teaspoon grated ginger. 1/2 teaspoon chili flakes. Salt and pepper to taste. Fresh cilantro for garnish.
Instructions: In a bowl, whisk together coconut milk, lime juice, soy sauce, honey, minced garlic, grated ginger, chili flakes, salt, and pepper to create the marinade. Place the peeled and deveined shrimp in a resealable plastic bag or shallow dish. Pour half of the marinade over the shrimp, reserving the rest for later. Seal the bag or cover the dish and refrigerate for at least 30 minutes to marinate. Preheat the grill to medium-high heat. Thread the marinated shrimp onto skewers, allowing excess marinade to drip off. Place the skewers on the preheated grill and cook for 2-3 minutes per side, or until the shrimp are opaque and lightly charred. Brush the reserved marinade over the shrimp during grilling for added flavor. Once cooked, remove the shrimp skewers from the grill and garnish with fresh cilantro. Serve the Coconut Lime Grilled Shrimp hot, accompanied by your favorite side dishes.
