These Pistachio Cranberry Energy Bars are delicious and nutritious snacks that are ideal for on-the-go consumption. They provide a quick energy boost and are a great alternative to store-bought granola bars because they are packed with the goodness of pistachios, cranberries, and chia seeds.
Ingredients: 1 cup roasted pistachios. 1 cup dried cranberries. 1/2 cup rolled oats. 1/4 cup honey. 1/4 cup almond butter. 1 tablespoon chia seeds. 1/2 teaspoon vanilla extract. Pinch of salt.
Instructions: Put parchment paper around the edges of a square baking dish. To make rough crumbs, pulse the rolled oats, dried cranberries, and pistachios in a food processor. Warm the honey and almond butter together in a bowl that can go in the microwave until the mixture is smooth. To the food processor, add the chia seeds, vanilla extract, and a pinch of salt along with the honey-almond butter mix. Press and hold the mixture until it sticks together. Put the mixture in the baking dish that has been prepared and press it down evenly and firmly. Put the mixture in the fridge for at least an hour so it can set. Take the bars out of the baking dish once they are set. The pistachio cranberry energy bars can be kept in the fridge for up to a week in a container that won't let air in.
