This Easy Vietnamese Pho is a simpler take on the traditional Vietnamese noodle soup. It's a great way to make a warm meal. It comes with tender beef slices, rice noodles, and a bunch of fresh toppings. The rich beef broth is flavored with fragrant spices.
Ingredients: 10 cups beef broth. 1 onion, thinly sliced. 3-inch piece of ginger, sliced. 3 star anise. 3 cloves. 1 cinnamon stick. 2 tablespoons fish sauce. 1 tablespoon soy sauce. 8 ounces rice noodles. 1 pound beef sirloin, thinly sliced. Garnishes: bean sprouts, fresh herbs Thai basil, cilantro, mint, lime wedges, thinly sliced chili peppers, hoisin sauce, Sriracha sauce.
Instructions: Set the beef broth on low heat in a large pot. Fish sauce, soy sauce, cloves, star anise, and a cinnamon stick should all be added to the broth. Let it cook for 30 minutes. In the meantime, cook the rice noodles according to the directions on the package. Remove the water and set it aside. Spread the cooked noodles out in bowls for serving. On top of the noodles, put thin slices of beef. Pour hot broth over the noodles and beef. Serve right away, with extra toppings on the side so that everyone can make their soup their own.
