Posted @withrepost • @allhallowsfarmhouse As the first day of November is known as All Hallows’ Day it seemed appropriate to make our version of Ossa dei Morti or ‘bones of the dead, served with a very generous spoonful of @solkiki_chocolatemaker chocolate and hazelnut nut spread. There’s a link to the recipe in the bio but if you’re in a hurry, weigh out 150 g caster sugar 75 g ground almonds 50 g rice flour 50 g spelt flour 1 tsp baking powder Bind together with a large tablespoon of apple purée or a free range egg. You may need a little almond milk as well. We also added a teaspoonful of @steenbergsltd orange extract and worked all the ingredients together. Flatten the sticky dough between baking parchment and cut into 24 biscuits. It has been a Limited Edition, but it was so very well received by you tat we decided it earned its own box! New release! 54% Brazil Nut Marañón, Peru This bronze award winner at the European @chocawards 2022 was a former Limited Edition bar, but due to its popularity and deliciousness has now earned its own box and is part of our range. We adore Brazil nuts and think they just have a bad rep or something? We’re just not sure why there is not a huge amount of chocolate+Brazil nuts available. This bar is an ode to the Brazil nut. We found that our Marañón cacao has just the right fruity tang and creaminess with its light chocolate notes it doesn’t fight with the Brazil nut, but allows to carry its flavours beautifully and fully. This is chocolate, it’s only just made. We’re running a few test batches with a new cacao. This recipe has no added cocoa butter, it is 70% cacao beans and 30% sugar. All tests came out looking as thick as this! It’s like a thick icing or ganache. Just trying to get this through a sieve I need to grow a few extra muscles 💪 It doesn’t mean this cacao is bad, just that we need to design a recipe with added cocoa butter in this case, so the chocolate is a bit thinner. Most 70% bars will contain some to a lot of added cocoa butter (or other fats if you’re unlucky). The cocoa beans and the cocoa butter together make up to the total percentage that is stated on the box, typically on the front. You really don’t always need to add cocoa butter to every cacao. There are reasons for adding it and reasons for not adding it. On our Solkiki dark chocolate boxes we mention the amount of cacao beans and the amount of cocoa butter separately. The amount of added cocoa butter has a huge impact on the outcome and flavour of the chocolate that you taste. There is currently not much transparency on the recipe formulation of a chocolate (%cocoa beans vs %added cocoa butter), we hope to see this change in the future. The chocolate we end up making with this particular cacao will most likely contain added cocoa butter because the chocolate came out so thick as you can see. We will carefully balance the chocolate recipe with the added cocoa butter to balance out the flavours and will let you know on the box how much cocoa butter has been added to this chocolate. This is one such pairing…… The @solkiki_chocolatemaker chocolate is a white bar with raspberry, @starwardwhisky and oats. Perfect tangy with a slight bit of whisky coming through. So I thought that I should enhance the whiskey note and pair the exact same one with it. But oh no, the mild and sweet Australian whisky got completely overwhelmed by this. So, I rethought my process and got back to my process of pairing contrasts. I tried a few other rye whiskies but this @newriff BiB rye turned to be the best. This spicy dram with notes of black pepper was pure perfection! Thank you guys for reading about my pairing process. Tell me about yours…. I relish the challenge of pairing chocolate with spirits, particularly whiskies and delight in the tasting of each and the extra achieved through their pairing but I am sometimes disappointed with the inclusions or infusions in chocolate. Happily disappointment averted with these two bars. These bars both include nibs soaked in the alcohol. The @solkiki_chocolatemaker Ararat Brandy Bar have tasted before in a superbly successful sensorial pairing with Andrew Miller’s Now We Shall Be Entirely Free where the brandy brought out the fruity elements in the chocolate with the deep caramels turning the Ararat brandy into tones of Calvados and sticky toffee apples. The nibs adding that divisive textural element. The whisky nibs bar uses the same Maranon cacao with a touch of pink mountain salt. I know this dark milk intimately with its deep fruity caramel flavours. It is a yum yum bar. The whisky for me strikes upfront here rather than delivering a kick at the end. That welcoming, warming whisky sensation and then this time a full on summer fruit compote. The chewy nibs at the end creating a lasting impression.
