Ingredients: 2 salmon fillets. 2 tablespoons Sriracha sauce. 2 tablespoons soy sauce. 1 tablespoon honey. 1 tablespoon sesame oil. 4 cups mixed salad greens. 1 cup shredded carrots. 1 cucumber, thinly sliced. 1/2 red bell pepper, thinly sliced. 2 green onions, chopped. 1/4 cup cilantro leaves. 1/4 cup roasted peanuts. 2 tablespoons sesame seeds.
Instructions: In a small bowl, mix Sriracha sauce, soy sauce, honey, and sesame oil to create a marinade. Place the salmon fillets in a resealable plastic bag, pour the marinade over them, seal the bag, and refrigerate for 30 minutes. Preheat the grill to medium-high heat and lightly oil the grates. Remove the salmon from the marinade and grill for about 4-5 minutes per side or until cooked through. While the salmon is grilling, prepare the salad. In a large bowl, combine mixed greens, shredded carrots, cucumber, red bell pepper, green onions, and cilantro leaves. Once the salmon is done, remove it from the grill and let it rest for a minute before flaking it into large chunks with a fork. Add the flaked salmon to the salad mixture and toss gently.
