Ingredients: 1 cup gluten-free rolled oats. 1/2 cup unsalted mixed nuts such as almonds, cashews, pecans. 1/2 cup dried fruits such as cranberries, raisins, apricots. 1/4 cup shredded coconut. 1/4 cup maple syrup. 1/4 cup creamy almond butter. 1/4 cup coconut oil. 1/2 teaspoon vanilla extract. Pinch of sea salt. 1 cup gluten-free dark chocolate chips.
Instructions: Warm the oven up to 350F 175C and put parchment paper in an 8x8-inch baking dish. In a big bowl, mix the oats, mixed nuts, dried fruits, and coconut shreds. Melt the coconut oil, vanilla extract, sea salt, and maple syrup in a small saucepan over low heat. Mix the ingredients well. Pour the wet mixture over the dry ingredients and mix them well so that everything is covered. Firmly press the mixture into the baking dish that has been prepared. For 20 to 25 minutes, or until just beginning to turn golden brown. Take it out of the oven and let it cool all the way down. As you go, melt the dark chocolate chips in 30 second chunks in a bowl that can go in the microwave. Spread the chocolate evenly over the bars that have been cooled. For about 30 minutes, or until the chocolate is set, put the dish in the fridge. Take it out of the fridge when it's set and cut it into bars. Keep in the fridge in a container that won't let air in.
