This is chocolate, it’s only just made. We’re running a few test batches with a new cacao. This recipe has no added cocoa butter, it is 70% cacao beans and 30% sugar. All tests came out looking as thick as this! It’s like a thick icing or ganache. Just trying to get this through a sieve I need to grow a few extra muscles 💪 It doesn’t mean this cacao is bad, just that we need to design a recipe with added cocoa butter in this case, so the chocolate is a bit thinner. Most 70% bars will contain some to a lot of added cocoa butter (or other fats if you’re unlucky). The cocoa beans and the cocoa butter together make up to the total percentage that is stated on the box, typically on the front. You really don’t always need to add cocoa butter to every cacao. There are reasons for adding it and reasons for not adding it. On our Solkiki dark chocolate boxes we mention the amount of cacao beans and the amount of cocoa butter separately. The amount of added cocoa butter has a huge impact on the outcome and flavour of the chocolate that you taste. There is currently not much transparency on the recipe formulation of a chocolate (%cocoa beans vs %added cocoa butter), we hope to see this change in the future. The chocolate we end up making with this particular cacao will most likely contain added cocoa butter because the chocolate came out so thick as you can see. We will carefully balance the chocolate recipe with the added cocoa butter to balance out the flavours and will let you know on the box how much cocoa butter has been added to this chocolate.
