Since these Potato Latke Muffins are baked instead of fried like traditional Hanukkah latkes, they are a little different. They're great for celebrating the holiday without having to deal with a frying pan because they're crispy on the outside and soft on the inside.
Ingredients: 2 cups grated potatoes. 1/2 cup grated onion. 2 eggs. 1/4 cup all-purpose flour. 1 teaspoon baking powder. 1 teaspoon salt. 1/2 teaspoon black pepper. 1/4 cup vegetable oil. Sour cream and applesauce for serving optional.
Instructions: Warm the oven up to 190C 375F. Grate the potatoes and onions and put them in a large bowl. Mix the eggs, flour, baking powder, salt, and pepper in a different bowl. Mix the egg mixture with the onion and potato mixture well. Put vegetable oil in muffin tins to grease them. Put a little of the potato mixture into each muffin cup and press it down gently. Put it in the oven and bake for 30 to 35 minutes, or until it's crispy and golden brown. If you want, you can serve it hot with sour cream and applesauce.
