Ingredients: 2 bulbs of fennel, sliced. 1 can of artichoke hearts, drained and halved. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 teaspoon dried thyme. Salt and pepper to taste. Fresh lemon juice, for serving.
Instructions: Preheat the oven to 400F 200C. In a mixing bowl, combine the sliced fennel and halved artichoke hearts. Add olive oil, minced garlic, dried thyme, salt, and pepper. Toss to coat the vegetables evenly. Spread the vegetables onto a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes or until the fennel and artichoke hearts are tender and slightly caramelized. Remove from the oven and squeeze fresh lemon juice over the roasted vegetables before serving. Enjoy!
