Ingredients: 1 cup quinoa, rinsed and drained. 2 cups cooked chicken, shredded. 1 can 15 oz black beans, drained and rinsed. 1 cup corn kernels fresh or frozen. 1 cup enchilada sauce. 1 cup shredded cheddar cheese. 1 teaspoon ground cumin. 1 teaspoon chili powder. 1/2 teaspoon garlic powder. Salt and pepper to taste. Fresh cilantro for garnish.
Instructions: Preheat oven to 375F 190C. In a large bowl, mix together quinoa, shredded chicken, black beans, corn, enchilada sauce, half of the shredded cheddar cheese, cumin, chili powder, garlic powder, salt, and pepper. Transfer the mixture to a greased baking dish and spread it evenly. Top with the remaining shredded cheddar cheese. Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly. Remove from the oven and let it cool slightly before serving. Garnish with fresh cilantro and serve warm.
