Caprese Mac and Cheese combines the classic flavors of a Caprese salad with creamy, cheesy macaroni. It's a delicious twist on traditional mac and cheese that's bursting with freshness from cherry tomatoes, basil, and mozzarella.
Ingredients: 12 oz macaroni pasta. 2 cups cherry tomatoes, halved. 8 oz fresh mozzarella, diced. 1/4 cup fresh basil leaves, chopped. 2 cloves garlic, minced. 2 tbsp butter. 2 tbsp all-purpose flour. 2 cups milk. 1 cup grated Parmesan cheese. Salt and pepper to taste.
Instructions: Follow the directions on the box to cook the macaroni until it is al dente. Remove the water and set it aside. Put the butter in a big pan and melt it over medium-low heat. Cook for one to two minutes, until the garlic smells good, after adding it. After you add the flour, keep stirring for another two minutes. Slowly whisk in the milk until the mixture is smooth and thick. Grate some Parmesan cheese and mix it in until it melts and is well mixed in. Add pepper and salt to taste. Put the cherry tomatoes, diced mozzarella, chopped basil, and cooked macaroni in the pan. Stir the cheese sauce into everything until it's spread out evenly. Add the cheese and heat for another two to three minutes, until the food is hot all the way through. Serve hot, and if you want, top with extra basil leaves.
