Delicious and satisfying chicken and bean tostadas with a zesty chipotle lime sauce, loaded with fresh toppings. A perfect balance of flavors and textures in every bite!
Ingredients: 1 cup quinoa, cooked. 1 lb chicken breasts, cooked and shredded. 1 can black beans, drained and rinsed. 8 tostada shells. 1 cup shredded lettuce. 1 cup cherry tomatoes, halved. 1 cup shredded cheddar cheese. 1/2 cup chopped fresh cilantro. 1/4 cup diced red onion. 1/4 cup sliced jalapenos optional.
Instructions: In a large bowl, combine cooked quinoa, shredded chicken, and black beans. Place tostada shells on a baking sheet and evenly distribute the quinoa-chicken-bean mixture on each shell. Top each tostada with shredded lettuce, cherry tomatoes, cheddar cheese, cilantro, red onion, and jalapenos if desired. In a small bowl, whisk together the Chipotle Lime Sauce ingredients see below and drizzle over the tostadas. Serve immediately and enjoy!
