Ingredients: 4 ears of corn on the cob. 2 jalapeno peppers, seeded and finely chopped. 2 limes, juiced. 1/4 cup olive oil. 1/4 cup fresh cilantro, chopped. 1/2 red onion, finely chopped. 1/2 cup cherry tomatoes, halved. Salt and pepper to taste.
Instructions: Preheat your grill to medium-high heat. Grill the corn on the cob, turning occasionally, until it's charred and cooked through, about 10-12 minutes. Remove the corn from the grill and let it cool slightly. Using a sharp knife, cut the grilled corn kernels from the cobs and transfer them to a large mixing bowl.
