These Pepita-Crusted Tuna Cakes are packed with flavor and protein, making them a delightful seafood dish. The combination of tuna, crunchy pepitas, and flavorful seasonings creates a satisfying meal that's perfect for any occasion.
Ingredients: 2 cans tuna, drained. 1/4 cup finely chopped red bell pepper. 2 tablespoons chopped fresh parsley. 1/4 cup mayonnaise. 1/2 cup breadcrumbs. 1/4 cup finely crushed pepitas pumpkin seeds. 1 egg, beaten. 1 teaspoon Dijon mustard. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Drained tuna, chopped red bell pepper, parsley, mayonnaise, breadcrumbs, crushed pepitas, beaten egg, Dijon mustard, salt, and pepper should all be put in a bowl. Mix everything together well. Little patties should be made from the mixture. Set a pan on medium heat and add the olive oil. In a skillet, cook the tuna cakes for three to four minutes on each side, or until they are golden brown and warm all the way through. Enjoy while hot!

This creamy and flavorful Lemon Shrimp Risotto is ideal for a special occasion or a cozy night in. The tender shrimp and creamy Arborio rice are complemented by the tangy lemon and savory Parmesan cheese. It may take some time and effort to create, but the end result is well worth it.
Instructions: Warm the broth in a large saucepan over medium heat. Melt the butter in a separate large saucepan over medium heat. Cook, stirring frequently, until the onion is translucent, about 5 minutes. Stir in the Arborio rice to coat it with the butter. Cook for about 1-2 minutes. 1 cup of the heated broth should be added to the rice mixture and stirred until the liquid is absorbed. Continue adding 1 cup of broth at a time, stirring constantly, until the rice is tender and creamy, about 20-25 minutes. Cook until the shrimp are pink and cooked through, about 5 minutes, in the rice mixture. Combine the Parmesan cheese, parsley, lemon juice, salt, and black pepper in a mixing bowl. Serve immediately and enjoy.

Ingredients: 4 salmon fillets. 4 cloves garlic, minced. 3 tablespoons honey. 2 tablespoons soy sauce. 1 tablespoon olive oil.
Instructions: Warm up the broiler. Cut up some garlic and put it in a small bowl. Add honey, soy sauce, and olive oil. Put the salmon fillets on a foil-covered baking sheet. Spread the honey-garlic mix on top of the salmon fillets. Put the salmon under the broil for 8 to 10 minutes, or until it's fully cooked and flaky when you use a fork. If you want, you can serve it hot with chopped parsley on top.
