These Pulled Pork Cornbread Waffles are a great mix of sweet and savory pulled pork and fluffy cornbread waffles. They're great for brunch or as a different dinner option.
Ingredients: 1 cup pulled pork. 1 cup cornbread mix. 1/2 cup milk. 1/4 cup shredded cheddar cheese. 1/4 cup diced green onions. 1/4 cup barbecue sauce. 1 egg. 1/2 tsp baking powder. Salt and pepper to taste. Cooking spray or oil for waffle iron.
Instructions: Preheat your waffle iron according to the manufacturer's instructions. In a mixing bowl, combine the cornbread mix, milk, shredded cheddar cheese, diced green onions, egg, baking powder, salt, and pepper. Mix until well combined. Lightly grease the preheated waffle iron with cooking spray or oil. Pour a portion of the cornbread batter onto the waffle iron and spread it evenly. Add a generous spoonful of pulled pork on top of the batter. Close the waffle iron and cook until the waffle is golden brown and crispy. Carefully remove the pulled pork cornbread waffle from the waffle iron and drizzle it with barbecue sauce. Repeat the process for the remaining batter and pulled pork. Serve the waffles hot, garnished with extra diced green onions and a drizzle of barbecue sauce.
