These Easy Skillet Nachos make a tasty and speedy appetizer or snack. These are ideal for game day or any informal get-together because they are packed with melted cheese, seasoned ground beef, and beans.
Ingredients: 1 pound ground beef. 1 small onion, finely chopped. 1 bell pepper, diced. 1 jalapeo pepper, finely chopped optional for extra heat. 1 packet of taco seasoning mix. 1 15-ounce can of black beans, drained and rinsed. 1 15-ounce can of diced tomatoes, drained. 1 cup shredded cheddar cheese. 1 cup shredded Monterey Jack cheese. 1 bag of tortilla chips. Sour cream for serving. Guacamole for serving. Salsa for serving. Fresh cilantro leaves for garnish.
Instructions: In a large skillet, cook the ground beef over medium-high heat until it's browned and crumbled. Drain excess fat if necessary. Add the chopped onion and bell pepper to the skillet. Cook for a few minutes until the vegetables start to soften. Stir in the optional jalapeo pepper if you want some extra heat. Sprinkle the taco seasoning mix over the beef and vegetable mixture. Add a little water and stir until everything is well combined and the mixture thickens slightly. Add the drained black beans and diced tomatoes to the skillet. Stir and let it simmer for a few more minutes until heated through. Spread the tortilla chips evenly over the skillet, on top of the beef and bean mixture. Sprinkle the shredded cheddar and Monterey Jack cheeses over the tortilla chips. Cover the skillet and cook on low heat for about 5 minutes, or until the cheese is melted and bubbly. Remove the skillet from the heat and garnish with fresh cilantro leaves. Serve the skillet nachos hot with sour cream, guacamole, and salsa on the side.
