Make colorful Lego-inspired cookies that are ideal for children's parties or any Lego fan. These cookies are not only delicious, but they also provide an excellent opportunity for creative expression.
Ingredients: 2 1/4 cups all-purpose flour. 1/2 teaspoon baking powder. 1/2 teaspoon salt. 1 cup unsalted butter, softened. 3/4 cup granulated sugar. 1/2 cup packed brown sugar. 1 teaspoon vanilla extract. 2 large eggs. Assorted food coloring gels. Royal icing for decorating.
Instructions: Mix the flour, baking powder, and salt together in a bowl with a whisk. Mix the butter, brown sugar, granulated sugar, and vanilla extract in a different large bowl until the mixture is light and fluffy. One egg at a time, beat in until everything is well mixed. Slowly add the dry ingredients to the wet ones and mix them together until they are just combined. Cut the dough into smaller pieces and use the food coloring gels to give each piece a different color. Put each color of dough in a plastic bag and put it in the fridge for at least an hour. Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Shape small amounts of each color of dough into the shape of a Lego brick. Leave some space between each cookie when you put the Lego shapes on the baking sheet that has been prepared. After the oven is hot, bake for 10 to 12 minutes, or until the edges are just beginning to turn golden. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet. Then, move them to a wire rack to cool all the way down. Once the cookies are completely cool, use royal icing to make patterns and designs on them that look like Lego blocks. Before you serve or store the cookies, let the frosting set.
