Vegan: literally did not fucking ask.

I hope to have a veggie patch like my mums one day. These were a few parsnips we picked a bit early 😂 still tasted yummy, just not enough! 🌿🌿🌿

Winter has resulted in a pie obsession. . 🍄Mushroom and leek pie🍄: You'll need, 1 leek, 2 celery stalks, approx 20 mushrooms, 1 crushed garlic piece, a vegetable stock cube, 1 cup of cashews and 2 cups of water, 1 tbsp of nutritional yeast, pastry, almond milk. . Sounds kinda funny but this was a pretty big hit. Blend the cashews with water until milky, cook the leeks and celery in some oil till soft, add the garlic and mushrooms, cook until mushrooms are juicy, add vegetable stock cube, nutritional yeast and then little bits of the cashew cream over time till thick-ish. Let cool for a little while you grease the pie holder also known as a pie tin or mine was glass(the name escapes me😂) with vegan butter or coconut spray oil is what I used, line with the pastry, fill it with the other stuff and make sure it looks like a pie and bake for half an hour😘 🙌🌿
