These grilled zucchini skewers are a perfect addition to your summer BBQ. The smoky flavor combined with the zesty garlic and oregano marinade makes for a delicious and healthy side dish. Quick and easy to prepare, they're a crowd-pleaser for any outdoor gathering.
Ingredients: 4 medium zucchinis, sliced. 1/4 cup olive oil. 2 cloves garlic, minced. 1 teaspoon dried oregano. 1 teaspoon smoked paprika. Salt and pepper to taste. Wooden skewers, soaked in water.
Instructions: Preheat the grill to medium-high heat. In a bowl, combine olive oil, minced garlic, oregano, smoked paprika, salt, and pepper. Mix well. Thread zucchini slices onto the soaked skewers, creating kebabs. Brush the zucchini skewers with the prepared olive oil mixture, ensuring even coating. Place the skewers on the preheated grill and cook for 8-10 minutes, turning occasionally, until zucchini is tender and slightly charred. Remove from the grill and serve hot. Optional: Squeeze fresh lemon juice over the skewers before serving.
