Savor the tastes of autumn by biting into these delicious Pumpkin Spice Macarons. With a rich buttercream filling of pumpkin spice, they are the ideal balance of sweet and spicy. A true treat for autumn are these macarons!
Ingredients: 150g almond flour. 150g powdered sugar. 2 large egg whites about 70g. 100g granulated sugar. 1/2 tsp pumpkin pie spice. 1/4 tsp cinnamon. 1/4 tsp nutmeg. Orange gel food coloring optional. 1/2 tsp vanilla extract. For the Pumpkin Spice Buttercream:. 1/2 cup unsalted butter, softened. 1 1/2 cups powdered sugar. 1/2 tsp pumpkin pie spice. 1/4 tsp cinnamon. 1/4 tsp nutmeg. 1/2 tsp vanilla extract. 2 tbsp canned pumpkin puree.
Instructions: Line a baking sheet with silicone baking mats or parchment paper. Mix the spices, powdered sugar, and almond flour in a food processor. Once thoroughly mixed, pulse and set aside. Lightly beat egg whites until frothy in a large mixing bowl. Add the powdered sugar gradually and beat until stiff, glossy peaks form. To the egg white mixture, add a few drops of orange food coloring if using and vanilla extract. The batter should be smooth and glossy after the almond flour mixture has been gently folded in. Pour the batter into a piping bag that has a round tip on it. Pipe tiny, evenly spaced circles onto the baking sheet that has been prepared. To eliminate air bubbles, tap the baking sheet against the counter, and allow the macarons to rest for half an hour so that a skin forms. Set the oven temperature to 300F 150C. Bake for 1518 minutes, or until the macarons start to take on a footed shape. Leave them on the baking sheet to cool completely. Beat softened butter until creamy in order to make the Pumpkin Spice Buttercream. Add the spices, vanilla extract, powdered sugar, and pumpkin puree gradually. Beat until fluffy and smooth. Sort the macarons into similar-sized pairs. One macaron should have a layer of the Pumpkin Spice Buttercream piped or spread on it before being sandwiched with another. Not required: For decoration, sprinkle a little extra pumpkin pie spice over the macaron tops. To enable the flavors to combine, refrigerate the macarons for a minimum of 24 hours.
