Ingredients: 1 lb gnocchi. 1 cup canned pumpkin puree. 1/2 cup heavy cream. 1/2 cup chicken or vegetable broth. 1/2 lb Italian sausage, casings removed. 1/2 cup grated Parmesan cheese. 2 tbsp chopped fresh sage leaves. 2 cloves garlic, minced. Salt and pepper to taste. 1/4 cup breadcrumbs optional.
Instructions: Preheat oven to 375F 190C. Cook gnocchi according to package instructions until al dente. Drain and set aside. In a skillet, cook the sausage over medium heat until browned, breaking it into crumbles. Add minced garlic and chopped sage, cook for another 2 minutes. Stir in pumpkin puree, heavy cream, and broth. Season with salt and pepper to taste. Simmer for 5 minutes. Add cooked gnocchi to the skillet, stirring to coat them evenly with the sauce. Transfer the mixture to a greased baking dish. Sprinkle grated Parmesan cheese and breadcrumbs on top, if using. Bake for 20-25 minutes until bubbly and golden brown on top. Serve hot, garnished with additional fresh sage leaves if desired.

Ingredients: 1 cup cornmeal. 1 cup all-purpose flour. 1 1/2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 tsp pure vanilla extract. 1 cup buttermilk. 1 1/2 cups fresh strawberries, hulled and halved. 2 tbsp maple syrup. 1 tbsp olive oil. 1/2 tsp vanilla extract. Powdered sugar for dusting. Fresh mint leaves for garnish, optional.
Instructions: Warm your oven up to 350 F 175C and put paper liners in a cupcake tin. Mix the cornmeal, all-purpose flour, baking powder, baking soda, and salt together in a bowl using a whisk. Put away. When the butter is soft, put it in a separate large bowl and mix it with the sugar until it is light and fluffy. One at a time, add the eggs and beat well after each one. Add the vanilla extract and mix well. It's best to start with the dry ingredients and end with the buttermilk as you add them to the wet ingredients. Don't mix any further than that. Fill each lined cupcake pan about two-thirds of the way to the top with cupcake batter. After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. Get the strawberries ready to roast while the cupcakes are baking. Mix the strawberry halves with the vanilla extract, maple syrup, and olive oil. Place them on a baking sheet and roast them in the oven for 10 to 12 minutes, or until they start to smell good and turn caramelized. Allow the cupcakes and roasted strawberries to cool all the way down. Put a spoonful of roasted strawberries on top of each cupcake to put them together. If you want, you can sprinkle it with powdered sugar and top it off with fresh mint leaves. Serve and have fun!

Put a popsicle stick into each mold and freeze them for at least four hours, or until they are solid. No need to: Before you serve, melt vegan white chocolate chips and drizzle them over the top of each popsicle.

Put small chocolate chips, pineapple chunks, and diced strawberries into popsicle molds. Pour the banana mix on top of the fruit layers in the molds. Put in the popsicle sticks and freeze for at least 4 hours, or until the whole thing is solid. Once the popsicles are frozen, run them under warm water for a few seconds to get them out of the molds. Have fun!

For two to three minutes on each side, or until just barely browned. Do it again with the rest of the batter to make more crepes. Put the sliced mushrooms in a different pan and heat 2 tablespoons of olive oil. Cook them until they are golden brown and soft. Add pepper and salt. Mix tahini, lemon juice, and 2 tablespoons of water together until the dressing is smooth. Add pepper and salt to taste. Put some basil pesto on each crepe, then add mushrooms that have been sauted and tahini dressing on top. Wrap the crepes in foil and serve them hot. Have fun!

Instructions: Soak cashews in water, then add nutritional yeast, lemon juice, minced garlic, salt, and pepper. Process the mixture in a food processor. To make cashew mozzarella, blend until smooth. On 4 pieces of bread, spread a lot of cashew mozzarella. On top of the cashew mozzarella, put tomato slices and basil leaves. Add the last few slices of bread on top to make sandwiches. Use olive oil to cover the outside of the sandwiches. With the grill pan or pan in the pan on medium heat, heat it up. Press or grill the sandwiches for three to four minutes, or until they are golden brown and crispy. Carefully turn the sandwiches over and cook for three to four more minutes on the other side. Take it off the heat and let it cool down a bit before you serve.
