Ingredients: 1 box instant vanilla pudding mix. 1/2 cup unsalted butter, softened. 1/4 cup granulated sugar. 1/2 cup packed brown sugar. 2 large eggs. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 1 teaspoon baking soda. 1/4 teaspoon salt. 1 cup white chocolate chips. 1/2 cup dried cherries.
Instructions: Preheat the oven to 350F 175C. In a mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Mix until creamy and well combined. Add the eggs and vanilla extract to the mixture. Beat until smooth. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredient mixture to the wet ingredients, mixing until a dough forms. Stir in the white chocolate chips and dried cherries. If the dough seems too soft, you can refrigerate it for about 30 minutes to make it easier to handle. Scoop tablespoon-sized portions of dough and roll them into balls. Place the dough balls onto a baking sheet lined with parchment paper. Bake in the preheated oven for about 10-12 minutes, or until the edges are golden brown. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
