These Roasted Strawberry Rhubarb Popsicles are a delightful summer treat that perfectly balances the sweetness of strawberries with the tartness of rhubarb. The roasting process intensifies the flavors, resulting in a refreshing and creamy popsicle.
Ingredients: 1 cup strawberries, hulled and halved. 1 cup rhubarb, chopped. 1/4 cup sugar. 1 tsp vanilla extract. 1 cup Greek yogurt. 1/2 cup milk. 1-2 tbsp honey optional.
Instructions: Warm the oven up to 190C 375F. Put strawberries, rhubarb, sugar, and vanilla extract in a baking dish. Put the fruit in an oven that has already been heated for 20 to 25 minutes, or until it is soft and slightly caramelized. Let the roasted fruit mix cool down all the way. Put the roasted fruit, Greek yogurt, milk, and honey if using into a blender. Mix until it's smooth. Place the mix into popsicle molds. Place popsicle sticks inside the molds. Put it in the freezer for at least four hours, or until it's completely set. Pop the treats out of the molds when they're cool and enjoy!
