These Keto Taco Stuffed Peppers are a delicious low-carb twist on traditional tacos. They are filled with seasoned ground beef, cheese, and veggies, making them a satisfying and flavorful meal.
Ingredients: 4 large bell peppers, halved and seeds removed. 1 pound ground beef. 1 packet taco seasoning mix check for low-carb option. 1 cup shredded cheddar cheese. 1/2 cup diced tomatoes. 1/4 cup diced onion. 1/4 cup chopped cilantro. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Preheat the oven to 375F 190C. In a skillet over medium heat, add olive oil and saut diced onion until translucent. Add ground beef to the skillet and cook until browned, breaking it into crumbles. Stir in taco seasoning mix, diced tomatoes, and chopped cilantro. Cook for another 2-3 minutes. Place bell pepper halves in a baking dish, cut side up. Spoon the taco meat mixture evenly into each bell pepper half. Top each stuffed pepper with shredded cheddar cheese. Cover the baking dish with foil and bake for 25-30 minutes, or until the peppers are tender. Remove foil and bake for an additional 5 minutes to melt the cheese and allow it to bubble. Serve hot and enjoy!
